Memo Luengas, un chef originario de Tampico, Tamaulipas, ha trazado una trayectoria ejemplar en el mundo de la gastronomía internacional. Su historia, marcada por la pasión, la resiliencia y la creatividad, es un testimonio del poder de la determinación y el trabajo duro.

Memo nació y creció en Tampico, donde pasó su infancia en un ambiente lleno de vida y tradiciones. Sin embargo, a los 24 años,decidió buscar nuevos horizontes. Fue así como decidió trasladarse al Caribe y, posteriormente, a Alemania, donde su carrera despegó al abrir un restaurante en Stuttgart junto a Heidi, su esposa, de ascendencia alemana y mexicana.

Aunque inicialmente Memo había soñado con estudiar mercadotecnia, descubrió su verdadera pasión por la gastronomía a los 17 años. Tras estudiar en Veracruz, un amigo lo animó a trasladarse a Barcelona, donde tuvo la oportunidad de formarse y trabajar en restaurantes de alta cocina. 

Trabajar con algunos de los mejores chefs del mundo fue un punto de inflexión en su carrera. «El hecho de trabajar en Europa ya era un gran salto,» comenta Memo. Practicar en lugares como elBulli y aprender de sus ídolos fue una experiencia transformadora que le abrió nuevas puertas y le permitió llevar su talento a nuevas alturas.

Adaptarse a vivir y trabajar en lugares tan distintos como Alemania y España no fue fácil. Memo recuerda con humor sus primeros días en Berlín, una ciudad que inicialmente no le gustó debido al clima frío y las barreras idiomáticas. Sin embargo, su determinación lo llevó a aprender el idioma y adaptarse a la cultura local, un proceso que tomó cerca de tres años.

La inspiración de Memo proviene de sus raíces y su familia. «Mi mamá y mi abuelo me enseñaron a trabajar duro y a ser perseverante», señala. Esta ética de trabajo, combinada con su constante búsqueda de conocimiento y superación personal, ha sido clave en su éxito.

Memo define su cocina como una fusión de temporada, basada en ingredientes locales y orgánicos. Sus menús se crean a partir de un proceso creativo único, inspirado en colores y luces. «Empiezo por colores y luz, y luego desarrollo el producto,» explica. Este enfoque innovador le ha permitido destacar y ser reconocido por su creatividad y originalidad.

Actualmente, Memo está trabajando en varios proyectos emocionantes. Uno de ellos es «Mejor Tacos,» una línea de comida congelada que busca introducir la auténtica cocina mexicana en Europa, comenzando por el Reino Unido y Alemania.

A pesar de su éxito internacional, Memo no olvida sus raíces. «Tengo invitaciones para hacer negocios en Ciudad de México y me encantaría desarrollar proyectos allá», afirma. Después de cinco años sin visitar México, planea regresar el próximo año y explorar nuevas oportunidades en su tierra natal.

Cuando se le pregunta qué consejo le daría a su yo de 17 años, Memo reflexiona: «Le diría que tenga más paciencia. Todo llegará a su tiempo.»
