Costanzo: de San Luis Potosí para el mundo

Durante el mes de septiembre, especialmente el día 13, se le rinde homenaje a uno de los manjares más ricos que ha dado la naturaleza y que se convirtió en un placer para el paladar, se trata del Día Internacional del Chocolate.

Una festividad que surgió en Francia en el año 1995, como en honor al escritor británico Roald Dahl, autor de la deliciosa historia «Charlie y la Fábrica de Chocolate».

Para celebrar este día, se resaltó la marca de chocolates icónica de San Luis Potosí, que es buscada por mexicanos y extranjeros; una empresa potosina con casi un siglo de historia. 

Se trata de Chocolates “Costanzo”, una marca orgullosamente potosina con presencia en ciudades Monterrey, Querétaro Saltillo, Zacatecas, Irapuato, Aguascalientes, Guadalajara, Tampico, entre otras. 

Historia 

Don José Costanzo Navazzotti nació en Turín, Italia, en 1980. A finales de la década de los veintes llegó a la ciudad de San Luis Potosí, por sus amplios conocimientos en la elaboración de caramelos, trabajó en la fábrica de dulces La Victoria, actualmente Chicles Canel´s. 

En 1930 decidió abrir su propio negocio y para ello adquirió una finca en la calle de Galeana, en el Centro Histórico de la ciudad de San Luis Potosí, en donde aún se encuentra. 

Posteriormente su viuda María Palafox y su hijo Luis Costanzo Palafox, se hicieron cargo de la fábrica y continuaron la elaboración de dulces y chocolates, de una manera meticulosa y con maquinaria importada de Italia.

En la actualidad Chocolates Costanzo sigue siendo propiedad de don Luis Costanzo, quien se asoció con la familia Díaz Infante para mantener a la empresa en constante evolución. 

Lograron posicionarse en el gusto de los potosinos y visitantes y crearon un producto con carácter propio que hasta el día de hoy es uno de los favoritos de chicos y grandes.

Se han creado presentaciones especiales que han propiciado un mejor desplazamiento del producto y en el año 2014 iniciaron con el análisis del funcionamiento de las distintas tiendas lo que derivó el exitoso modelo de Franquicias.

“Este modelo, día a día hemos ido ajustando y ha permitido que, con simple cambio de operación e imagen, se incrementen considerablemente las ventas, gracias a un mejor servicio, mayor rapidez en el despachar el producto y el cobro a los clientes, gracias a su sistema punto de venta personalizado”, resalta la empresa.

Chocolates Costanzo fabrica más de 150 productos, con maquinaria y tecnología alemanas e italianas, como los conocidos tornillos, las duquesas, las princesas, las jaleas y las nueces encaneladas. 

En San Luis Potosí es común ver a ciertas horas de la tarde las filas que se hacen en las dulcerías Costanzo para adquirir tan afamados dulces, cien por ciento potosinos.

Día Internacional del Chocolate

Esta fecha también contó con el apoyo de los Estados Unidos, y todo por una casualidad de lo más cremosa, dado que ese mismo día también nació Milton S. Hershey, el fundador y dueño de la Compañía de Chocolates Hershey.

El chocolate procede del árbol del cacao. Este árbol era bastante común en los países tropicales de América, como México, Colombia, Costa Rica y Venezuela, este último es el que posee el tipo de cacao considerado más rico del mundo.

Durante la época precolombina, cuando existían civilizaciones como los Mayas, Incas y Aztecas, la semilla de cacao era considerada moneda de cambio, su sabor y versatilidad eran tan codiciadas, que muchos artesanos, cazadores y poblados agrícolas, vendían sus productos a cambio de ella.

PANORAMA DEL CACAO EN MÉXICO Y EL MUNDO

En 2023, las entidades federativas con mayores ventas internacionales en Cacao y sus Preparaciones fueron:

 Nuevo León (US$350M), Jalisco (US$137M), Ciudad de México (US$117M), Tamaulipas (US$97.7M) y Baja California (US$44.9M).

Con un volumen anual de 28 mil 466 toneladas, México ocupa el lugar número 13 en la producción mundial de cacao.

En 2023, México contaba con 26 establecimientos dedicados a la elaboración de chocolate y productos derivados. Esta cifra se ha mantenido estable desde 2017.

A nivel global, Alemania es el primer país exportador de chocolate y demás preparaciones alimenticias que contienen cacao, con unos 1.009 millones de kilos exportados en 2022.

En Tampico, los chocolates más buscados en la sucursal de Costanzo, ubicada en la calle Cristóbal Colón, a una cuadra del Palacio Municipal, son:
